For this post, we have a nice dose of both sweet and savory that’s perfect for the holiday season. We’ll help you to make amazing dish of Bacon Mac & Cheese that will surely have people around your table asking for seconds. But don’t let them eat too much, because they’ll want to save room for our other amazing recipe – Double Chocolate Muffins!
Bacon Mac & Cheese
1 box of your favorite elbow macaroni
½ pound of Applewood smoked bacon, sliced
½ cup of all-purpose flour
½ cup of chicken stock
8 ounces of sharp cheddar cheese, shredded
¼ teaspoon of pepper
1 teaspoon of kosher salt
2 cups of Guernsey Heavy Whipping Cream
1 cup of Guernsey Whole Milk
½ cup of Guernsey Grade A Sour Cream
First, cook the elbow macaroni following the directions on the box. While doing that, cook the bacon in a heavy bottom pan over medium heat until it is nice and crispy. Remove the bacon from the pan and drain it on a paper towel.
Next, add flour to the bacon oil and combine for about five minutes. Turn the heat to low and slowly whisk in the chicken stock until the mixture is combined. Add the heavy whipping cream and milk and stir. Bring the combined mixture to a light simmer and whisk in the sour cream.
Add in the shredded cheese, stirring constantly until the cheese is combined and the sauce is smooth. Add the salt and pepper and let the mixture sit for about 10 minutes.
Finally, mix the sauce with the pasta until all noodles are covered completely. Crumble the cooked bacon and any leftover cheese on top. Enjoy!
After everyone enjoys their mac & cheese, it’s time for dessert! Or if anybody is too full, maybe they can enjoy these muffins with breakfast and coffee the next morning!
Double Chocolate Muffins
½ cup of unsalted butter, at room temperature
1 cup of sugar
2/3 cup of Dutch-processed unsweetened cocoa powder
2 teaspoons of baking powder
½ teaspoons of salt
2 teaspoons of vanilla extract
2 cups of all-purpose flour
1 ½ cups of chocolate chips
¾ cup of Guernsey Chocolate Milk
1/3 cup of Guernsey Grade A Sour Cream
Preheat your oven to 350 degrees. In a large mixing bowl or a stand mixer beat together the butter, cocoa powder, sugar, baking powder, salt and vanilla until the mixture is fluffy.
Next, beat in the eggs and then stir in the milk and sour cream. Mix in the flour and then fold in the chocolate chips.
Lightly grease a 12-cup muffin pan. Divide the batter equally between the cups, filling each all the way to the top. If desired, sprinkle each muffin with a bit of sugar.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean. If there is melted chocolate from the chips, that is totally fine!
Remove from the oven and cool on a wire rack for 10 minutes. Enjoy! We recommend having a muffin with a tall glass of our award-winning Guernsey milk or maybe even a scoop of our super premium ice cream!!
